If you want a hot, baked side dish, consider baking a carrot. I found some large, deeply colored carrots at the farmers market. Cut in half, breaded and baked, they make a nice alternative to a baked potato.
Breaded Baked Carrots
- 3-4 large carrots, cut in half
- 1 Tbs. olive oil
- 1/3 c. bread crumbs (I used the kind with Italian seasoning)
Cover the carrots with the oil, and dredge with the bread crumbs. You can also put the crumbs into a bag, add the oiled carrots, and shake. Place flat side up in a greased pan, sprinkle with a little salt, cover with foil and bake at 350 degrees for 40-50 minutes.
